After a long time I am back with a Thai recipe. Today’s post is “Layered Basil Tofu Rice” .Thai red chili’s & Garlic are cooked along with Tofu & Onion in Sesame Oil, Soya sauce & mushroom sauce. It is then garnished with a generous amount of basil leaves. The curry is then layered with Thai jasmine rice.

Its winter and we generally consume lot of soups. Vegetable Soups are generally filling but at times it is just not enough. To make it more filling I add noodles at times to make it as a one pot dish. Vegetables & Mung beans are sautéed and cooked in soup stock. Thick rice noodles is then immersed in the boiling stock and cooked. The dish is finally garnished with fried tofu cubes.

Guacamole is a dip originated from Mexico and later it has been used in American cusine as a dip. This post is about “Crunchy Guacamole” with ingredients available in an Indian kitchen. Guacamole is made out of Avocado, lime juice, garlic, cilantro , jalapeno are combined and ground with tomato & onion and served as a dip to any healthy chips.

Dragon Fruit is still available in our place and I never miss to buy the pink one every time. The sweetness is perfect and the fruit is loaded with fiber & anti-oxidants and they are definitely a part of our regular diet whenever they are available in the market.Sweet pink flesh dragon fruit is combined with sharp & sour kalamansi (lime) ,sugar and blended to a smooth texture and finally kept in freezer gives this yummy dessert.

During our visit to Bali I tasted this Black rice pudding and all of us liked it. Generally on Sunday evening’s we would prepare some snack at home as we would like to munch it when we watch movies in the tv. I would prefer to have them healthy rather than oily ones. Hence I would go only for the baked snacks. Dill Leaves, nuts, parmesan cheese are combined with yogurt and lemon juice. The ingredients are then blended into a dip consistency and served along with DIP Food’s Multigrain strips – Bajra.

Preparing my Kid’s school lunch box is a bit interesting stuff for me as she needs a variety of food every day. Kid’s expect some color’s, cheesy and most importantly tasty. Red rice pasta with vegetables is one such dish I prepared recently and she liked it a lot. In fact she was showing the variety of color’s to her friends in this dish. Naturally red color paparika is infused in red rice pasta and cooked along with garlic, capsicum, cauliflower and finally garnished with Dill Leaves and Parmesan cheese gives this yummy and garlicky paprika infused red rice pasta

A quick and easy Thai dessert, popularly served in road side shops and restaurants in Thailand. Very ideal dessert for any parties and potlucks as it does not involve much cooking time and can be served at room temperature. It also does not need any region specific ingredients except for the palm sugar which can be replaced with normal sugar. The sharp taste of the pineapple and the sweet taste of gula melaka (coconut palm sugar) make it very refreshing dessert at the end of a meal.

Cream cheese & cooking cream blended with honey, orange rind & vanilla essence and finally mixed with strawberry chunks gives this yummy dish which tastes almost like an ice-cream.

Today’s post is about one of the very common dish which I make when some special guests come to my house. Wondering who could be the special guests – Its none other than my daughter’s friends who come home for a play date. Feedback from these little guests is always good and they are genuine too.
Cheese & Bread stuffed puffs is puff pastry brushed with basil oil and stuffed with Red cheddar & Mozeralla , bread slices and baked in oven for a crunchy snack.

Having oven at home is a blessing in disguise on the days where you are required to do multi-tasking at home. I have published lots of recipes with oven many being an alternative to deep fried recipe. This recipe is one of them which I used to do from the time I learnt to use oven. Baked Salad  - Cherry tomatoes, capsicum, onion, boiled potatoes mixed & baked with homemade basil oil and finally garnished with crushed walnuts, cranberries, feta cheese & Parmesan cheese - A healthy and tasty way to consume vegetables.

My next set of recipes uses oil mixed with Italian herbs and I thought it is good to put them as a separate post. Being in Singapore I have access to all the herbs freshly in almost all grocery shops, however I felt there should be some other easy way to make these oils as I am aware that all the herbs are not available in all places.

After cooking black rice and millets based recipes for the blog, it’s time to focus attention on my kid’s choice of recipe. She has been patiently eating all my millet based or black rice based recipes without a fuss as I promised her the next whole will be recipes of her choice.
Thinly sliced fried Aubergine layered in baking tray and topped with a combination of cooked corn, tomato puree, pizza topper, basil , Quinoa pasta and finally baked with shredded mozzarella cheese this is today's recipe.

Lime leaves Spaghetti

Spaghetti is a regular dish when there is a kid at home. I was in mood of clearing up the fridge and found some kaffir lime leaves left over. I decided to make spaghetti by mixing kaffir lime leaves instead of regular Italian basil leaves. I did the lime leaves pickle and add it to spaghetti. It turned out to be tangy and super delicious. So I decided to post this after trying out couple of times by checking at the feedback of my family members. All of us liked it in spite of repeating it thrice within a span of 10 days. This dish is very fast to do if you have the lime leaves pickle handy and it is easy to pack it for kids in the early morning for school lunch box.

Thai Yellow Curry


Thai curries are our all-time favorites. I generally make the curry paste and store them in freezer and use it for 2 or three times. Storing the curry paste in freezer makes the cooking of this dish much faster during working days. Lemongrass is an aromatic healer and has a lot of health benefits. I generally make it when anyone of has cold or cough at home in the form of soup and also include them in dishes. One such dish which is very easy to make is the thai yellow curry.
