Having oven at home is a blessing in disguise on the days where you are required to do multi-tasking at home. I have published lots of recipes with oven many being an alternative to deep fried recipe. This recipe is one of them which I used to do from the time I learnt to use oven. Baked Salad  - Cherry tomatoes, capsicum, onion, boiled potatoes mixed & baked with homemade basil oil and finally garnished with crushed walnuts, cranberries, feta cheese & Parmesan cheese - A healthy and tasty way to consume vegetables.

There is less vegetable cutting work for this salad unlike our regular cooking. Cherry tomatoes are slightly tangy, boiled potatoes get roasted well and give a good taste. Capsicum and onion on the other hand adds a good flavor. Mixing these vegetables with basil & Italian dressing enhances the taste.
Walnuts are crunchy and cranberries are sweet. Mixing of the cheese will always attracts kids who are poor vegetable eaters however can be ignored if you do not prefer to add it. You may wish to add any vegetables except the leafy ones, however if you choose to add the hard one’s like carrot which takes time to cook make sure you par boil them else the onion would get burnt.

Salad

Ingredients
Cherry tomatoes – 15pieces
Chopped Green Capsicum – ¾ cup
Potato – 1
Onion – 1
Feta cheese 1 inch cube– 10 pieces
Dried cranberries – 1 tblsp
Walnut – 5
Parmesan cheese – 1 tblsp
Pepper – 1 tsp
 Salt to taste
Basil Salad Oil – 2 tsp
Italian Salad Dressing (Not the cream variety) – 2 tsp - optional
Measurements
1 tsp = 5ml
1 tblsp – 15 ml
1 cup = 237 ml

Preparation

1.       Boil Potato in pressure cooker for 2 whistles (or until cooked). Chop them into 1 inch cubes.
2.       Chop Capsicum, onion into big chunks of 1 inch size.

  1. Chop the walnuts
  2. Mix Capsicum, onion, potato, and tomato with the basil oil.
     5. Add salt and sprinkle pepper.
6. Add Italian salad dressing oil.
7. Mix well and let this marinate for an hour.
8. Pre heat oven at 200 deg for 5 mins
9. Place the oven tray and bake for 20 minutes mixing once in between the vegetables.
10.Take out and then add cranberry, walnuts feta cheese, parmesan cheese and mix well.


11.Place them in the same oven which will still have the heat. This heat is enough for the cheese to get melted.
Can be served hot or chill.

Notes:
  1. Do not add any leafy vegetables.
  2. Cottage cheese can be added in that case it needs to be mixed along with vegetables
  3. Vegetables like carrot which are a bit hard must be par boiled and mixed with the rest of the vegetables.
  4. Onion’s get cooked faster and that is the indication to stop.
  5. Italian salad dressing is optional, in that case increase the quantity of basil oil by 1 more tsp.
