Here comes my next lunch ideas for diabetic people. This lunch menu has Bitter gourd and Dates Kulambu, Broccoli Tofu Stir Fry and Black Rice. All are extremely safe for diabetes. This is almost like a fusion platter as it has recipes from different cuisines.

Bali, Indonesia is known for its rich culture and tradition. There are many places in Bali which are not commercialized and they are a perfect holiday destination. During our visit to Bali I tasted this Black rice pudding and all of us liked it. Black glutinous rice cooked with cocunut milk, pandan leaves(optional), gula melaka and served with banana's gives this drool worthy pudding.

What happens when Black Rice from Thailand meets Andhra style pulihora mix and finally marinated in a claypot a drool worthy “Black Rice Pulihora” is born on Adiperukku (A festival celebrated in Tamilnadu). I made this recipe on Adiperukku a couple of days ago.  Pulihora is an all-time favorite in my home including my little one who literally waits for us to take Perumal Temple in Little India particularly on Saturday as we get Pulihora as a prasadam. I really cannot beat that taste.

With the morning rush we always prefer to have some dish which can be cooked faster and at the same healthier. Cooking Black rice consumes a lot of time as we need to soak them for a minimum of 8 – 10 hrs. However, Black rice congee is one recipe which can be cooked very fast if the congee powder is prepared in advance. This soup or congee is a combination of black rice, barley, flax seeds roasted and powdered coarsely and cooked along with tossed garlic & spinach.

Vempampoo or dried neem flowers are generally used in various tamil cooking recipes. Blackrice or Kavuni Arisi is on the other hand is a grain which has a whole lot of health benefits which includes prevention of diabetes, blood sugar control, weight control etc. This is a simple but very healthy recipe of tempering of dried neem flavours with spices and finally tossing the black rice with them.

Dates season has started in Singapore and many shops have been loaded with stocks of Dates. We generally get a lot of dry fruits – particularly dates during the month of May & June from various parts of the world. Sweet Pongal is a dish which is cooked in many festivals in Tamilnadu. We generally add jaggery to this dish, however here is my way of cooking with Dates. By cooking with Dates the dish is completely guilt free for people who are diet conscious and those with diabetes.

Adai or Dosa | Pulses,Millets,Black & Red Rice



Adai is one of my favorite dish, however not all of us at home like adai. Hence I came up with a mix of ingredients which can serve as adai and when diluted with water can serve as crispy dosa. I had included the black rice or kavuni arisi which is high in antioxidents and effectively reduces the cholesterol levels. The adai has equal proportions of millets,pulses,chana dhal,red rice and black rice and it turns out to be a very healthy dish.
