Ashoka Halwa or Moongdhal Halwa is one of my favorite sweet. Protein rich Moong dhal is the main ingredient for this dish. Ghee gives the richness to this halwa while cardamom powder makes this sweet and exotic dish. Cooked moong dhal merges well with these ingredients and transforms into a mouthwatering sweet.

Tomorrow is Diwali and I wanted to make a sweet with coffee. I have so many coffee loving friends and I thought I must give this as a part of my Diwali sweets. “Filter Coffee Choco Peda” is a quick and easy microwave peda made out of milk powder, condensed milk, first degree filter coffee decoction, Cocoa powder. This is like any other regular microwave peda but with coffee dominating the taste.

This Diwali I wanted to post few quick, easy and halwa’s with healthy ingredients. In continuation of my 5 minutes Oats Milk halwa, here comes my next halwa which is “Weetbix Halwa” and it can be prepared in less than 10 minutes. For this recipe, WeetBix is roasted in ghee and cooked along with almonds,saffron & palm sugar.

In continuation with my "Festive cooking on busy days" here comes my next recipe "Oats Halwa". In any halwa sugar and ghee cannot be avoided. I have tried to reduce both of them in this recipe. Oats Halwa is a combination of Homemade oats milk, sugar, cardamom, ghee and nuts which is kept in microwave for 6 minutes and cooked like a halwa consistency.

Diwali the festival of lights is coming soon and Singapore is already welcoming this with beautiful decorations in Little India and MRT’s. Today’s post is Minnie Mouse Rose Kaju Katli -  Cashewnuts are combined and cooked with sugar syrup & rose essence. The kaju katli is then shaped into minnie mouse cartoon character and decorated with white chocolate. A special treat for kids!!!

While the fruit sauce can be stored in the refrigerator for a week, the ice pops can be stored for a month. The taste is similar to panchamritham ice cream which we used to eat during the childhood days.

Bali, Indonesia is known for its rich culture and tradition. There are many places in Bali which are not commercialized and they are a perfect holiday destination. During our visit to Bali I tasted this Black rice pudding and all of us liked it. Black glutinous rice cooked with cocunut milk, pandan leaves(optional), gula melaka and served with banana's gives this drool worthy pudding.

Jackfruit is still available in Singapore though I am not sure about other parts of the world. Since we have some huge fan’s of jackfruit at my home , I will always buy them whenever I see them in Fairprice shop. Due to this we also have a lot of jackfruit seeds at home.  Cooked Jackfruit seeds is combined with palm sugar and cardamom powder and made as a modak stuffing. It this then stuffed with riceflour dough and steamed in dried biodegradable leaves (thonnai leaves) to get a flavorful “Jackfruit seed modak"

What happens if a festival falls on a busy working day and you do not want to skip some good food? Try this easier and healthier version of sweet Pongal. Cook Thai brown jasmine rice along with yellow moong dhal, cardamom, powdered palm sugar, saffron and mash it with milk. Later, temper the dish with ghee, cashews & raisins. A quick and healthy sweet pongal is ready for any occasion.

Dry fruits Suzhiyam (Boorelu) with Black Rice

Suzhiyam or boorelu is a traditional dish made Tamilnadu & Andhra for many festive occasions. Not all sweets need to be made from sugar & jaggery. With the rise in numbers of diabetes all over the world we need to start looking for alternative sweet content in our traditional dishes. Today being Vinayaga Chaturthi I had plans to make the regular modak’s with coconut , sesame and urad dhal. However there was a big no no for the sesame modak from my kid as she does not like sesame. Hence I decided to replace it with flax seeds. In a way it was much faster than all other modak’s. Flax seeds is ground along with palm sugar and cardamom powder as a powder and mixed with boiling water to form the modak stuffing. It this then stuffed with riceflour dough and steamed in dried biodegradable leaves (thonnai leaves) to get a quick and easy “Flax seed modak"

Pink Dragon Fruit or Pitaya is a fruit with a lot of health benefits. Including them as a part of our daily diet is good for our health. This post is about some of my knowledge on this fruit and with a sweet recipe using this fruit. Pink flesh dragon fruit cooked in ghee along with roasted & powdered millets, sugar , cardamom ,garnished with Cashew nuts and finally flavored with rose water gives you this yummy and pinky "Dragon Fruit Kesari".

Once I am back to Singapore, I had a huge list of recipe’s to be cooked and posted. The list also included a lot of fusion recipes. One such recipe is Avocado Ada Pradhaman . Generally I do the traditional ada pradhaman but this time I wanted to give a twist the original recipe and it became a super hit at my home. I tried twice in the last 2 weeks with and without milk. The natural creamy texture of Avocado makes the recipe so rich along with the Ada and it tasted good in both the versions. Those who are allergic to milk can have this dessert without any guilt by omitting the milk part.

Pal Therattipal is a traditional recipe made in our home during festive seasons. Milk is boiled well and cooked until it is reduced into 1/4th of its quantity or thicker consistency and added with sugar. A simple and tasty traditional sweet ideal for any festival.

Dates season has started in Singapore and many shops have been loaded with stocks of Dates. We generally get a lot of dry fruits – particularly dates during the month of May & June from various parts of the world. Sweet Pongal is a dish which is cooked in many festivals in Tamilnadu. We generally add jaggery to this dish, however here is my way of cooking with Dates. By cooking with Dates the dish is completely guilt free for people who are diet conscious and those with diabetes.
