Oats Idiyappam

Oats Idiyappam
Oats Idiyappam
Idiyappam is a famous dish in South India. Traditionally it is made with plain rice flour but I wanted to make it with oats to make it healthier. Oats flour is mixed with little rice flour and made as a pliable dough. The dough is then placed in idiyappam maker to make idiyappams. It is then steamed for 5 minutes.

Thonnai Idli

Thonnai Idli
Whenever I go to Chennai I will get a big bunch of Thonnai (Cups made out of dried leaves). I use them for steaming idly’s, paruppu usli etc. They give a nice flavor to the dish. One such dish I make is the thonnai idli .
Temper you regular idli batter with ghee, gingelly oil, mustard, pepper, cumin seeds, cashew’s, Bengal gram & urad dhal, curry leaves. Ferment it overnight , pour them in your thonnai to steam for 15 minutes and finally tie them  as a packet for a minimum of 30 minutes to get this flavorful thonnai idli.

Thavala adai

Thavala adai
Thavala adai is a south indian evening snack which is made in thavalai (pot). The dish consumes a lot of oil but tastes heaven. Cooking this dish in thavalai needs lots of patience and the alternative version is to cook in non-stick pan. This consumes comparatively lesser oil and time. The original version is done with raw rice as the base, however this can also be prepared with black rice, millets. This post is with raw rice and I shall be posting the other variations soon.

Morkali | Rice Savory Halwa

Morkali
MorKali or Rice Savory Halwa is a dish made with rice flour and buttermilk. We generally take it as tiffin in evening. My mom is a specialist in this dish. The dish has halwa consistency but in childhood we would prefer to make it a bit crispier in the bottom part as it would taste very nice.

Stuffed Idli

Idli is a regular breakfast or tiffin in any south Indian house. One of my friends passed on this recipe and it became hit in my home after I made it. This post is with potatoes however you may try to add any vegetables as long as they can be made as a tight patty. You may pack this for lunch box too and it remains soft.

Adai or Dosa | Pulses,Millets,Black & Red Rice

Adai is one of my favorite dish, however not all of us at home like adai. Hence I came up with a mix of ingredients which can serve as adai and when diluted with water can serve as crispy dosa. I had included the black rice or kavuni arisi which is high in antioxidents and effectively reduces the cholesterol levels. The adai has equal proportions of millets, pulses, chana dhal, red rice and black rice and it turns out to be a very healthy dish.
