Jackfruit Seed Lemon Dhal
Lemon Dhal is my all time favorite and we generally use varieties of vegetables for this recipe. This time I tried with jackfruit seeds and it turned out be very tasty. Jackfruit seeds are combined with small yellow dhal and cooked with green chili’s and ginger. The dish finally gets a good flavor when we temper them with mustard cumin seeds along with lemon juice.

Before I left for vacation to India I had a bulk of jackfruit seeds collected over time.
My tips to store jackfruit seeds where sunlight is lacking:
In Singapore, we get jackfruits all over the year (I think almost whole year ;) ).  I do not have enough sunlight to dry them. So the best way to preserve them is to remove their skin put them in a box with a tissue paper in the fridge. However this would be good only for 15 – 20 days. So I store them in the freezer by placing them in a zip lock.

Recipe: Jackfruit Seed Lemon Dhal
Preparation Time : 10 minutes
Soaking Time : 40 mins
Cooking Time : 20 mins
Gas : Low
Yields : 2 cups

Ingredients
Small Yellow Dhal – 1 cup
Jackfruit seeds – ½ cup
Green Chili – 2
Lemon – ½ of big lemon or as needed
Curry Leaves – few
Coriander – few
Ginger – 1 small piece
Oil – 2 tsp
Mustard – 1/3 tsp
Cumin seeds – 1 tsp
Water – 1.5 cups
Hing cake – 1 small piece

Preparation
1.      Wash and soak dhal for 40 minutes
2.      Chop jackfruit seed into half. Finely chop green chili’s and ginger.
3.      Take cooker pan and add dhal, Jackfruit seeds, green chili’s , ginger, salt and hing.
4.      Add enough water and turmeric.
5.      Pressure cook for 3 whistles.
6.      Once the pressure is released, remove the weight and mash the dhal well.
7.      Take a small pan and add oil, mustard and cumin seeds.
8.      Temper them to the dhal.
9.      Garnish with Coriander.
10.  Squeeze lemon juice and mix well.
11.  Jackfruit seed lemon dhal is ready

Measurements
1 tsp = 5ml
1 tblsp – 15 ml
1 cup = 200 ml

  Notes
1.      Adjust the taste of lemon and chili based on your individual preference.
2.      It is a must to chop the jackfruit seed into two, else they would not cook well.

Hing cake – 1 small piece
