Eggless Sprinkles Butter Cookies with Wholegrains


Rainbow Butter Cookies
When the kid comes back from school around 3pm or 4 pm its an odd time to give dinner and most of the time we land up giving up junk food. This colorful wholegrain cookies are a double treat for kids as they are healthy and colorful at the same time. Wholegrain Flour mixed with colorful sprinkles, cardamom, loads of butter is made as a dough, shaped into beautiful cookies and finally baked in oven gives this yummy and drooling “Sprinkle Butter Cookies”
I use wholegrain rather than maida(plain flour) primarily for health reason and there is no compromise in taste if the ingredients are added in correct proportions. Sprinkles are just for attraction and since they already have sugar content I reduced the actual sugar quantity so that the taste is balanced. To put it in simple way this is the regular nan kattai biscuit but wholegrain flour and sprinkles.

Preparation Time : 10 mins| Bake time -12 min
Preheat – 5 min |   Bake Temparature – 180deg c
Yields : 12 medium size
Ingredients
Wholegrain Flour – 1 cup
Brown Sugar – 1/3 cup
Multi color sprinkles – ¼ cup
Cardamom Powder – 1/2 tsp
Baking Powder – small pinch
Butter – 100gms(or as needed)
Olive oil – 50 gms
Baking Sheet – cut as per the oven tray length

Measurements
1 tsp = 5ml
1 tblsp – 15 ml
1 cup = 237 ml

Preparation
       1.       Powder Sugar and cardamom in a mixer into a fine powder
2.       Mix flour, sugar, cardamom, sprinkle, baking powder and mix them well.

3.       Add the olive oil and mix well.
4.       Melt the butter (optional) and add them into the mix little by little. You may choose not to melt the butter as the hand heat itself is enough while mixing.
5.       Make them into dough.

6.       Grease your hands with butter and make small balls and flatten them into a round shape. Do not make it thin.
7.       Take a baking tray and place baking sheet.
8.       Place the cookies one by one giving a good gap between each one of them.
9.       If required use a fork and just put a simple design.
10.   Preheat oven for 5 minutes at 180deg c.
11.   Place the cookies and let it bake. It will take around 12 – 15 mins. Keep watching after 10 mins as the baking varies based on the side.

12.   Once baked place them on a wire rack and let them cool completely.

13.   Store them in an air tight container.

Notes:
Make sure the cookies are in equal size as the baking time varies based on the size.
You may use plain flour if you don’t have wholegrain flour.
Don’t worry on the small cracks in the cookies, they will be still crispier.
Sprinkles will already have sugar added hence do not add more sugar than given.
