2 Minutes Vegetable Oats Mix

This year I managed to compile around 40 recipes and have posted in my google plus collections. Refer to the link and follow the collections for future updates. Today’s post is about “2 minutes Vegetable Oats mix” which is ideal for breakfast, travel, office desk snacks. All you need is a cup and hot water!!

Being a vegetarian, it is quite difficult to get a healthy vegetarian breakfast when we travel. I generally prepare this oat mix so that I no need to struggle looking for vegetarian breakfasts in the morning. This mix is also ideal for those who prefer to have some snacks in the evening while working in office. All we need is a cup of hot water and coffee mug and we get this healthy dish ready in 2 minutes.
The mix must be stored in airtight container after it cools down to room temperature. For very cold climates or places where aircon is running continuously it stays between 7 to 10 days outside the refrigerator while for very hot climates it stays between 4 to 5 days.

2 Minute Vegetable Oat Mix

Time: 20 minutes

Yields
: 2 Cups
|
Oven
Temperature : 180 deg c
|
Ingredients
|
Quick or Instant Oats – 2 cups
|
Carrot - 1/3 Cup
|
Beans - 1/3 Cup
|
Capsicum - 1/3 cup
|
Garlic - 1 clove (Optional)
|
Oil – 1 tsp
|
Salt – to taste
|
Rasam Powder – 1 tsp
|
Aluminium foil – to cover the tray

Preparation
|
1.
Take an oven
tray and cover it up with aluminum foil.
|
2.
Add all the
vegetables. I choose carrot, capsicum, beans. You can choose any vegetables
except tomato, cucumber or those which gives too much water after cutting. Do
not add spinach.

3.
Add oats, rasam
powder, salt and oil.
|
4.
Mix them well
|
5.
Let this
marinate for an hour at least. You can marinate it up to 3 hours also.

6.
After 1 hour,
pre heat oven and let this cook for a total of 18 – 20 minutes.

7.
The oats and
all vegetables would turn crispy, that is the correct time to switch off.

8.
Take out and
allow it to cool to room temperature. Store them in an airtight container.

9.
To serve, take
the desired quantity in a cup and pour hot water. Close it for 2 minutes and
consume.

Notes
|
Do not add
leafy vegetables.
|
Do not add
vegetables which gives more water like cucumber, tomato, bottle guard.
|
Onion cooks
much faster than the rest hence do not add onion’s as the main vegetable. Add
them in equal parts like other vegetables. If you are a beginner, I would
suggest you to avoid it.

Capsicum gives a
good flavor hence do not omit. However it is not a mandatory vegetable.
|
The spice
quantity mentioned is not too spicy as I do not prefer to eat very spicy in
the early morning. You may alter the spice levels.

You may add
garam masala and garlic too.

|
1 tsp = 5ml
|
1 tblsp – 15 ml
|
1 cup = 200 ml
