Kovakkai Thayir Pachadi | Tindora Raita
Tindora/Kovakkai is diabetic friendly vegetable and good for
nervous system. They taste similar to cucumber though we cannot have them raw
like cucumber. Today’s post is about Tindora raita which can be served with
roti’s and any mixed rice. Tindora is steamed in microwave and mixed with raw
onion’s,cumin powder and yogurt.

Today being world diabetic day I wanted to post a diabetic
friendly recipe and also a diabetic friendly lunch. Tindora was my choice as I
have not published any recipe using it. They can be cooked in various ways like
dhal, vegetable curry , Chutney etc. I used to make raita’s with them. They
taste so fresh and go very well when mixed with onion’s.

Ingredients
Kovakkai / Tindora – 12
Onion - 1
Salt – to taste
Coriander leaves – few
Cumin Powder – ½ tsp
Yogurt – 1 cup

Measurements
1 tsp = 5ml
1 tblsp – 15 ml
1 cup = 237 ml

Preparation
|
1. Wash
and chop tindora/kovakkai.
2. Stem
the tindora in microwave for 2 minutes.
3. Add
sliced onions, cumin powder and salt. Mix well.
4. Add
beaten yogurt and mix well.
5. Garnish
with coriander leaves.
Serve with roti’s, mixed rice
or briyani’s
