Filter coffee is common in many of our households. We generally prefer the first or second degree coffee and most of the time third degree coffee is never prepared and this mild flavor decoction is wasted in many households. Today’s recipe is with this third degree decoction.  Ragi, wheat flour, 3rd degree coffee decoction, palm sugar, cocoa & other baking ingredients are mixed and poured into a claypot cup. The mix is then kept in microwave for a minute to get this fluffy Ragi choco coffee Mug cake”.

I started this left over seris primarily because most of the times the left overs are consumed only by person in charge of the kitchen. Sometimes they are forced to eat as they do not want to waste. In fact they indirectly contribute to weight gain ;). Hence my objective was to make use of left overs and cook recipes which can be consumed and enjoyed by all. This post is in continuation of the left over series.

This post is not going to give the details of a regular filter coffee as they are widely available in the internet. Hence I am skipping those steps. You may refer to Wikipedia for reference.  I had used claypot in this recipe as many of them are not aware that claypot is microwave safe. You may replace it with regular microwave cup. You may use a regular flour or maida but millets are healthier and hence I had used ragi.

The coffee variety you are using alters the taste slightly. I used “Deccan Coffee” – Corona variety. As mentioned in there website, the coffee beans in this are Honey Processed Arabica in which the brew has floral aroma & malt like overtone. The dark medium roast is suitable for espresso devotees and goes amazingly well with a dash of milk. Hence I use them when I make a filter kaapi. They have few more varieties of coffee but I felt corona was the best for this recipe.

For the sweetness I added palm sugar instead of regular white sugar. If you do not have palm sugar you may replace with regular sugar. Stevia can also be used. The cake tastes is balanced well only when we add cocoa powder hence it is a must to add them. Choco chips can be ignored, however increase the amount of sugar and cocoa powder in that case.

This is eggless hence I had added apple cider vinegar. When baking soda is combined with vinegar the chemical reaction between them would lift up the fluffiness of the flour.  Do not use plain vinegar as they would turn the cake a bit salty and you can actually smell the vinegar. Apple cider vinegar on the other hand is flavorful and at the same time good for health. You may try the similar combination for regular eggless cake, they would turn super fluffy.

Ragi choco coffee Mug cake

Ingredients
3rd Degree Coffee Decoction -  3 tblsp
Milk – 1 tblsp
Ragi Flour – 2 tblsp
Wheat flour – 1 tblsp
Cocoa powder – 1 tblsp
Ghee – 1 tblsp
Palm Sugar – 2 tbslp
Salt – ¼ tsp
Baking soda – 1/4th tsp
Baking powder – 1/4th tsp
Apple Cidar Vinegar – ¾ tsp
Choco chips – 2 tblsp
Measurements
1 tsp = 5ml
1 tblsp – 15 ml
1 cup = 237 ml


Preparation
1.       Prepare the filter coffee in the regular way by adding 5 scoops of filter coffee and less than ½ cup boiling water.
 

2.       Once the decoction is brewed, use them as first degree coffee. Repeat the same process to get the second & third degree decoction. We will be using the third degree decoction.
3.       Take 3 tblsp of decoction & mix it with 1 tblsp milk. Keep it aside
4.       Add ragi flour, wheat flour, palm sugar in a bowl and mix them well.

5.       Add Ghee to this and mix well again
6.       Add baking soda, baking powder and apple cider vinegar. Just mix them for a second.
7.       Pour the coffee mix and mix well.


8.        Add the cocoa powder. This can be added along with the dry ingredients also.

9.       Mix all of them without any lumps.

10.   Add 1 tblsp of choco chips and give it a mix
11.   Transfer them to a claypot mug or regular microwave mug.

12.   Sprinkle the remaining choco chips.

13.   Microwave high for a minute. Make sure the cup is only filled with 3/4th of the mix else they would spill.

Enjoy it as it is  or with a scoop of vanilla ice cream


è Do not use normal plain vinegar as they would give a salty taste as compared to apple cider vinegar.

è The proportion of coffee decoction would vary if you are using 1st degree or 2nd degree ones.

è You may use instant coffee powder by adding ½ tsp of coffee powder. You may increase if you need a stronger flavor.
