With Navarathri coming soon its time to start thinking about the golu theme and also variety of sundal's for offering everyday. Thenga Manga Soya Sundal is a dish similar to the sundal we
get in beach in Chennai. Luckily we still get raw mango here from other countries in Mustafa hence the mango season is still on for us. Soya beans is combined and cooked with raw mango, fresh coconut,chili powder and curry leaves.The dish gets a nice flavor since we temper the sundal with coconut oil and mustard.
I got Soya instead of peas by mistake and did not know what to do. So I tried the same dish which I planned with peas and it turned out to be very good. There is not much taste difference except that we can feel the taste of soya rather than peas.
Onion is optional and during Navarathri it can be ignored.
However the taste was simply awesome and reminded me my childhood memories in Marina Beach.

Thenga Manga Soya Sundal
Recipe Cuisine : Indian | Soak time :8 hrs
Cooking Time : 15 mins
Ingredients
Soya Beans – ½ cup
Mango – 100 ml cup
Cocunut – I tblsp heaped
Turmeric – ¼ tsp
Chili Powder – ½ tsp
Curry leaves - few
Salt – to taste
Chopped Onion - 1/2 cup (Optional)
To
Temper
Cocunut Oil – 1 tsp
Hing - generous pinch
Musturd – 1/3 tsp

Measurements
1 tsp = 5ml
1 tblsp – 15 ml
1 cup = 250 ml

Preparation
1. Soak
soya beans overnight.
2. Pressure
cook for 5 whistles as it is very hard. Strain the water completely.
3. Take
a pan add items in “To temper” table in the order given.
4. Add
onion and stir only once.
5. Immediately
add Soya beans and Mango.
6. Add
Chili powder, salt, curry leaves and just cook for 1-2 mins.
7. Lastly
add the coconut and immediately switch off.
Soya Sundal is ready is ready
to be served.
Notes
- Do not cook the onion for long time, just a stir would be enough.
- You may add grated carrots in small quantity.
